Creamy Cottage Cheese & Spelt Dessert with Peaches & Pistachio

Summer is all about refreshing treats. And what better way to beat the heat than with a delicious, creamy rice pudding?

I know you’re thinking, “But it’s not Christmas. Why would I want rice pudding?”

Well, my friends, this recipe is a summer twist on the classic dish that will satisfy your cravings.

Best of all?

It’s super easy to make.

All you need is leftover grains (I used a quinoa/brown rice mix), whipped cream, vanilla sugar, and cottage cheese.

Mix everything together and top it with whatever fruit is in season.

I used fresh blueberries and raspberries. But you could also use peaches, plums, or even mango.

Add a sprinkling of your favorite nuts and seeds if you’re feeling fancy.

The result is a cold, creamy treat that’s perfect for a summer evening.

So don’t wait until Christmas to enjoy rice pudding. Try this summer version and enjoy it all season long!

It’s also perfect for a quick and easy breakfast or snack if you have leftovers.

Trust me, you won’t regret it!
