Happy 1st December!!
Oh what a joy that we have entered one of my absolute favourite months! I am so excited to get all jolly and eat a lot of nutritious and delicious sweets! To be honest I have actually had a little trouble with what to create for us here on the blog. The past couple of Decembers, three to be exact, I have shared some of my favourite recipes + created new ones, and suddenly I found myself in doubt whether I had anymore up my sleeve. Cause the truth is that I replicate a lot of my recipes in a busy everyday, currently I live of salads with kale & pomegranate – like this and this 🙂 But after picking my brain and looking through several inspiration-pages and old homemade ‘cookbooks’ I have created some delicious recipes that I will share with you throughout December + an awesome New Years cake that will be posted between Christmas and New Years.
To begin our little Christmas adventure I came up with an old nordic and very seasonal classic – Baked Winter Apples. You can make this dish in a lot of different ways, with different fillings and different apple design. I love this cute version, where you place back the top of the apple, but some people like to cut the apple in halves or leave the top of. The filling can be varied quite a lot too – and here I have added a Christmas twist. I have made a healthy ‘marcipan’ where dates and nuts are blended together. It is more sticky than a classic marcipan, and it holds some butter too, simply to give it a perfect creamy texture after being baked. I used pistachios and toasted almonds, but you can actually use the nuts you have on hand. I thought about adding a splash of rum but forgot all about, but I think it would be a wonderful and aromatic twist to the recipe.
To give the apples a little glaze and extra colour I added a little in-between-baking-step where I remove the apples from the oven add a little butter and maple syrup and continue the baking. This can be omitted if you think it is too tricky, but it really does add a delicious caramelised surface!
I love this simple and easy dessert that is both healthy and nutritious. You can serve it with either yoghurt, creme fraiche or whipped cream, depending on you mood!
Baked Christmas apples filled with pistachio and date marcipan – A tasty love story
Serves 6 as a dessert
6 apples, choose some that can hold the shape while baking
30 g pistachio
50 g almonds
100 g soft dates, stone removed
1 generous Tbsp butter (25 g)
Pinch of salt
1 tsp cinnamon
½ tsp ground ginger
½ tsp ground vanilla
¼ tsp ground cardamom
1 tsp butter + 1 tbsp maple syrup
Preheat oven to 200ºC / 400ºF. Rinse all apples. Cut of the top ‘hat’ of the apple. Then gently remove the core of the apple – but be carefull not to cut brought the skin or the bottom of the apple.
In a foodprocessor combine butter, spices, dates and nut and blend until you have a sticky ‘marcipan’. Fill up the apples with the marcipan and place the top back on the apple. Place the apples in a baking tray and let them bake in the oven. After 10 min you remove the apples and place a little nut-sized piece of butter on top of each and drizzle them with a little maple syrup. Place them back in the oven and give them 10-20 more minutes, until they are completely tender and golden. The baking time varies according to sort of apple, so you need to use you eyes and nose here 🙂
To the apples with a little extra chopped pistachio and serve with a dollop of creme fraiche or whipped cream.
