Avocado Satay with Creamy Peanut Butter Sauce & Vegan Tapas

It think it is safe to say that most people love a creamy, delicious dip, and I personally feel that it can bind the whole meal together. Famous dippings counts hummus, pesto, guacamole and haydari, all inspired by the middle east. I am a firm believer that a good meal always should include a little creamy kick even if its is just some cubed white cheese or a really creamy lasagna, but you need it. It doesn’t only cream things up, but most dips are also packed with flavor, why it can make even a dull salad or some simple veggie sticks taste amazing.
Maybe this is one of the reasons why tapas has become so popular around the world. When we do tapas in our house it always includes a variety of pesto, cheese and tapenades along with different foods you can eat on the side and dip into these amazing combinations. It is so satisfying and people always seem to eat juuust a little too much.

Today I wanted to try some new different dippings with tasty satay. I came up with two different version. A delicious chicken satay served with an awesome baked feta and artichoke dip. This recipe can be found at Apetina. And I did a vegan one too which includes avocado satay and a creamy peanut butter sauce. I usually make this peanut butter sauce to go with my fresh Vietnamese spring rolls- But it is safe to say that it goes perfectly well with warm avocado sticks too yum. It is a great combination and I truly hope you try all the sticks and dippings, you could easily fuse them together for one big tapas table

Avocado Satay with Creamy Peanut Butter Sauce - a tasty love story

Avocado Satay w. Creamy Peanut Butter sauce
4 avocados
2 tbsp. sweet chili sauce
1 tbsp. sesame seeds

Peanut butter sauce
3 tbsp. peanut butter
80 ml stock
1-2 tsp soya

Directions
Preheat oven to 200 ºC/400 ºF. Open the avocado I half, take out the stone and gently scoop out the flesh in one piece. Cut the avocado into wedges and gently put on a little wooden stick. Brush with sweet chili sauce and drizzle with sesame seeds. Bake in the oven for 15 min.
In a bowl add all the ingredients for the peanut butter sauce and use a fork to whisk it together. Add a little extra stock if it seems to thick. Serve the avocado satay with the creamy dip.
