I always get tempted to call this vitamins in a jar, which you could easily argue that it is! Fresh, vitamin boosted, beautiful juice which can only make even the most vegetable scared soul wanna smile and burst into laughter. Or at least, that’s what I tell myself. It’s amazing how much the beetroots contribute to this juice; their lovely color, the high level of vitamin B and C and not to forget the unique flavor and round sweetness, which is perfectly balanced with the sour lemons and sharp, strong twist from the fresh ginger. Apples and carrots make a nice base for the juice since they are both sweet, fresh, really juicy and full of vitamins as well.
Freshly squeezed juice is a wonderful drink, all years around. You can easily vary it, and use all sorts of vegetables and fruits. A rule of thumb is to use 80% vegetables and 20% fruit in order to get a perfectly, balanced sweetness and avoid too much fructose (natural sugar from the fruit). Lemon/lime, ginger and fennel are some of the taste boosters you can add to turn different juices in a certain direction. Avocado or frozen berries can be blended in some juices afterwards to give the juice more structure and make it more creamy.
Remember that even though ‘green’ juice is healthy and nutritious, you drink almost the same amount of energy as the pieces of fruit and vegetables you add to the juice, and 2,5 carrots, 1-2 beets and 1 apple would not be considered a snack as much as a light meal. But what a great meal!!
An important tip; always buy organic fruit and vegetables to use for your juice making. This way you can avoid peeling your fruit and vegetables and instead use all of their tasty parts + get use of all those lovely vitamins placed just beneath their peel, win/win right?

Serves 2 big glasses
2-3 beetroots, medium size
5 big carrots
2 cm fresh ginger
1. In cold water rinse and clean the carrots, beets and apples, thoroughly until all dirt is gone. Cut of the ends of the carrots and beets.
2. Wash the lemon and ginger as well, you do not have to peel these either. Even though you can choose to peel the lemon if you do not like the (lovely) bitter twist it leaves in your juice.
3. Add everything to your juicer and let it do its magic.
Serve straight away in order to drink as many vitamins as possible, yup they slowly disappear after the juices have been released, so hurry up! Add a couple of ice cubes and enjoy!
If necessary you can keep the juice in a light and air tight container for some hours in the fridge, and it will still be great!
