It’s one of my absolute favorites and an easy go-to recipe.
It takes only 5-10 minutes to whip up a batch, and it stays fresh and delicious in the fridge for several days.
You can pair the kale with almost anything, and it just rocks!
I’ve added some of my favorite combinations, and to be honest, sometimes I add everything together as one big mixed mash-up, which is wonderful too.
A little bonus with this way of preparing kale is that massaging it helps your body digest it. You break down some of the tough structure in the kale by massaging it, but still, get the benefit of all the wonderful fibers.
Massaged Kale

Ingredients
- 300 g kale leaves
- Juice from 1 lemon
- 1 tbsp oil
- 1/2 tsp salt
- 1/2 tsp honey
Favorite add- ins & combos
- Avocado + goats cheese + dried cranberries
- Chicken + roasted carrots/sweet potatoes
- Toasted nuts + dates +feta
Instructions
- Rinse your kale thoroughly and pad it dry. Use your hands to tore pieces of the kale leaves from the stem. Place the kale in a large bowl. Add lemon juice, salt and honey. Use both hands to massage the kale, use all you’ve got and give it a rough time 😉 Massage the kale for 2-3 min, until the leaves begin to get soft and dark green. Now you actually have your finished kale and you can ix it up with all sort of ingredients or simply use it as a fresh side.
