Strawberry & Coconut Milkshake

Spring is here! And I couldn’t be more excited!

The craving for refreshing drinks like shakes, smoothies, and juices comes along with the warmer weather.

And let me tell you: There’s nothing like a berry shake to quench that thirst.

I can’t help but crave berries in my shakes, even though berry season isn’t quite here yet.

They give the creamy coconut milk such a fresh and delicious twist.

But if you’re like me, you don’t have a freezer full of berries you picked over the summer. Don’t worry!

Store-bought frozen berries can still make a delicious shake.

Just make sure that you find organic berries that were picked during their peak season.

And I highly recommend checking out the Scandinavian countries if you’re not sure where to find the best berries.

They know how to do berries the right way!

It is super easy to make a berry shake.

All you need to do is blend some frozen berries with a can of full-fat coconut milk, or use 300 ml of your favorite nut milk or regular milk.

You can also play around with different types of berries.

I love the raspberry version. But sometimes it’s best to keep it simple.

There is something magical about the combination of creamy coconut milk and fresh berries!

Strawberry & Coconut Milkshake

Ingredients

  • 150 g frozen strawberries you can use fresh when in season, and then use frozen bananas instead
  • 2 ripe bananas
  • 100 ml full fat coconut milk
  • 200 ml coconut water or ice water
  • ½ tsp vanilla
  • Zest from 1/2 organic lemon (optional)

Instructions

  • Add all the ingredients in a blender and blend until you have a foamy thick milk shake – Serve straight away!
