Avocado on Toast

Ingredients

  • 1/2 of a large ripe avocado
  • 1 piece of bread thick cut
  • 2 tablespoons of fresh lemon juice
  • 3-4 cherry tomatoes
  • sea salt and freshly ground pepper

Instructions

  • Place bread in a toaster, but don't toast yet.
  • Cut a washed avocado in half. Throw away the pit. Scoop out the flesh from one half, place in a bowl, and mash with a fork.
  • Add lemon juice, salt, and pepper and mix well.
  • Toast the bread.
  • Slice tomatoes.
  • When toast is done, spread avocado mash on top, and add tomatoes.
  • Enjoy immediately.
