Avocado on Toast

- 1/2 of a large ripe avocado
- 1 piece of bread thick cut
- 2 tablespoons of fresh lemon juice
- 3-4 cherry tomatoes
- sea salt and freshly ground pepper
Place bread in a toaster, but don't toast yet.
Cut a washed avocado in half. Throw away the pit. Scoop out the flesh from one half, place in a bowl, and mash with a fork.
Add lemon juice, salt, and pepper and mix well.
Toast the bread.
Slice tomatoes.
When toast is done, spread avocado mash on top, and add tomatoes.
Enjoy immediately.
