Rye Galettes w. Caramelized Fennel, Apple & Goats Cheese
Servings 6 single sized galettes
Crust
- 100 g butter or flavor free coconut oil
- 1/4 ice cold water
- 150 g rye flour
- 150 g plain white wheat flour
- 1 tsp salt
- 1/2 Lemon zest from lemon
- 1 tsp lemon juice
- 1/2 tsp fennel seeds
- 1 egg to brush the crust before baking if desired
Filling
- 2 fennel bulb
- 1 apple, finely sliced
- 100 g firm goats cheese
- 3 tbsp maple syrup
- 2.5 tsp fennel seeds, finely chopped
- 3.5 tbsp Oil or butter
- Flaky sea salt
- Fresh mint to serve
