Ingredients

Crust

  • 100 g butter or flavor free coconut oil
  • 1/4 ice cold water
  • 150 g rye flour
  • 150 g plain white wheat flour
  • 1 tsp salt
  • 1/2 Lemon zest from lemon
  • 1 tsp lemon juice
  • 1/2 tsp fennel seeds
  • 1 egg to brush the crust before baking if desired

Filling

  • 2 fennel bulb
  • 1 apple, finely sliced
  • 100 g firm goats cheese
  • 3 tbsp maple syrup
  • 2.5 tsp fennel seeds, finely chopped
  • 3.5 tbsp Oil or butter
  • Flaky sea salt
  • Fresh mint to serve
