Ginger Apples with a Thick Lemon Cream
Apples compote with ginger
- 3.5 KG apples choose some that are smashy when boiled and have a natural sweetness
- 75 G sugar sweetener of your choice
- 1/3 cup water
- 1 tsp freshly grated ginger
Raw lemon cream
- 1/2 cup generous heavy cream
- 1 tsp organic lemon zest
- 2 tbsp organic lemon juice
- 1/2 tsp ground vanilla
- 1 tbsp sugar or sweetener of your choice
Peel and dice the apples. Combine all the ingredients for the apple compote in a pot and bring to a boil. Let it simmer until tender for 8-10 min, then remove from heat and set a side to cool.
Make the lemon cream by stirring all the ingredients together in a bowl and set a side for 30 min in the fridge. The lemon will slowly thicken up the cream and you don’t need to whisk it thick.
When the compote has cooled and the cream is thick you can serve the dessert in glasses with apple compote in the bottom and lemon cream on top finished with delicious dark chocolate.
Keep well in the fridge for a day or two, and can easily be made in advance.. Enjoy!
