Bisquick Coffee Cake

Ingredients

Cake

  • 2 cups Bisquick baking mix
  • 2/3 cup milk
  • 2 tbsp granulated sugar
  • 1 egg
  • 1 tsp vanilla extract

Streusel Topping

  • 1/3 cup brown sugar packed
  • 1/3 cup Bisquick baking mix
  • 1/2 tsp cinnamon
  • 3 tbsp cold butter cut into small pieces

Instructions

  • Preheat oven to 375°F. Grease an 8x8 inch baking pan.
  • Make streusel: mix brown sugar, 1/3 cup Bisquick, cinnamon. Cut in cold butter until crumbly. Set aside.
  • Make batter: mix 2 cups Bisquick, milk, sugar, egg, vanilla until just combined. Do not overmix.
  • Pour batter into pan. Sprinkle streusel evenly on top.
  • Bake 20-25 min until toothpick comes out clean and streusel is golden. Cool 10 min before cutting.

Notes

Do not overmix — lumps keep the cake tender. Add 1/2 cup blueberries for a fruit version. Keeps wrapped at room temperature 2 days.
