Cake

Bisquick baking mix
2/3

milk

granulated sugar

vanilla extract
Streusel Topping
1/3
cup
brown sugar
packed
1/3
cup
Bisquick baking mix
1/2
tsp
cinnamon

tbsp
cold butter
cut into small pieces
Instructions
Preheat oven to 375°F. Grease an 8x8 inch baking pan.
Make streusel: mix brown sugar, 1/3 cup Bisquick, cinnamon. Cut in cold butter until crumbly. Set aside.
Make batter: mix 2 cups Bisquick, milk, sugar, egg, vanilla until just combined. Do not overmix.
Pour batter into pan. Sprinkle streusel evenly on top.
Bake 20-25 min until toothpick comes out clean and streusel is golden. Cool 10 min before cutting.
Notes
Do not overmix — lumps keep the cake tender. Add 1/2 cup blueberries for a fruit version. Keeps wrapped at room temperature 2 days.
