Cottage Cheese Cookie Dough

Ingredients

  • 1 cup full-fat cottage cheese
  • 1/3 cup almond flour
  • 2 tablespoons maple syrup or honey adjust to taste
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips

Instructions

  • Add the cottage cheese to a high-speed blender or food processor. Blend on high for about 60 seconds until completely smooth with no lumps.
  • Add the almond flour, maple syrup, vanilla extract, and salt. Blend again until fully combined and you have a thick, dough-like consistency.
  • Transfer the mixture to a bowl and fold in the chocolate chips by hand.
  • Enjoy immediately or refrigerate for 15-30 minutes for a firmer texture.
