Ingredients

For the Baked Brie

  • 1 sheet puff pastry, thawed but cold
  • 1 8-ounce wheel of brie cheese
  • 1/3 cup whole berry cranberry sauce
  • 1/4 cup chopped pecans, toasted
  • 1 large egg, beaten (for egg wash)

For Serving

  • Crackers or toasted baguette slices
  • Sliced apples or pears
  • Fresh rosemary sprigs for garnish

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Unfold the thawed puff pastry sheet on a lightly floured surface and smooth out any creases with a rolling pin.
  • Place the brie wheel in the center of the pastry. Spread the cranberry sauce evenly over the top of the brie, then sprinkle the toasted chopped pecans on top.
  • Fold the pastry edges up and over the brie, pulling the corners toward the center and pressing firmly to seal. Trim any excess dough.
  • Carefully flip the wrapped brie over so the seam side is facing down. Place it on the prepared baking sheet.
  • Brush the entire surface of the pastry with the beaten egg wash, making sure to cover all sides.
  • Bake for 20 to 25 minutes, or until the puff pastry is a deep golden brown and crispy all over.
  • Remove from the oven and let rest for 5 to 10 minutes before cutting. Serve warm with crackers, baguette slices, or sliced fruit.

Notes

Make sure the puff pastry is thawed but still cold for the best results. If it gets too warm and sticky, pop it back in the fridge for a few minutes. Toast the pecans in a dry skillet over medium heat for 3-4 minutes for extra flavor. You can assemble this ahead of time and refrigerate for up to 4 hours before baking.
