Hot Girl Summer Salad

Ingredients

  • 1 large head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 large cucumber diced
  • 2 avocados diced
  • 1 cup sweet corn kernels
  • 1/4 cup red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 2 tablespoons fresh cilantro chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1 clove garlic minced
  • salt and pepper to taste

Instructions

  • Chop the romaine lettuce and place it in a large salad bowl.
  • Add the halved cherry tomatoes, diced cucumber, corn kernels, and thinly sliced red onion to the bowl.
  • In a small bowl, whisk together the olive oil, lime juice, honey, minced garlic, salt, and pepper until emulsified.
  • Pour the dressing over the salad and toss to coat evenly.
  • Gently fold in the diced avocado and crumbled feta cheese.
  • Top with fresh cilantro and serve immediately.
