Microwave Peanut Brittle

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1 cup roasted salted peanuts
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  • In a large microwave-safe glass bowl, combine the sugar and corn syrup. Stir well.
  • Microwave on high for 4 minutes.
  • Stir in the roasted peanuts. Microwave on high for 3 to 4 minutes, until the mixture turns a light golden amber.
  • Add the butter and vanilla extract. Stir quickly until combined.
  • Microwave on high for 1 to 2 more minutes.
  • Remove from the microwave and immediately stir in the baking soda. The mixture will foam up and become light and airy.
  • Quickly pour the mixture onto a greased or parchment-lined baking sheet. Spread it as thin as possible with a spatula or the back of a spoon.
  • Let it cool completely at room temperature, about 30 minutes, then break into pieces.

Notes

Use a large bowl to prevent overflow when adding baking soda. Microwave wattages vary, so watch the color closely during the last few minutes. Work quickly once the baking soda is added, as the candy sets fast. Store in an airtight container at room temperature for up to 2 weeks.
