Roasted Broccoli

Ingredients

  • 2 large broccoli crowns about 1.5 lbs
  • 3 tablespoons good quality olive oil
  • 4 cloves garlic minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 lemon cut into wedges
  • Optional: ¼ cup freshly grated parmesan cheese
  • Optional: Red pepper flakes to taste

Instructions

  • Preheat oven to 425°F (220°C).
  • Wash broccoli and dry thoroughly.
  • Cut broccoli into even-sized florets (about 1.5-2 inches). Peel woody stems if needed and cut into similar-sized pieces.
  • Place broccoli on a large baking sheet and drizzle with olive oil.
  • Sprinkle with salt, pepper, and minced garlic. Toss until evenly coated.
  • Arrange broccoli in a single layer, making sure pieces aren't touching.
  • Roast for 20-25 minutes, tossing halfway through, until edges are crispy and golden brown.
  • Remove from oven and immediately squeeze fresh lemon juice over the hot broccoli.
  • If using, sprinkle with parmesan cheese while still hot.
  • Transfer to a serving dish and enjoy immediately!

Notes

Notes: For extra flavor, try adding 1 teaspoon of Italian seasoning or 2 teaspoons of nutritional yeast before roasting.
