Roasted Broccoli

Ingredients
2
large broccoli crowns
about 1.5 lbs
3
tablespoons
good quality olive oil
4
cloves
garlic
minced
1
teaspoon
kosher salt
½
teaspoon
freshly ground black pepper
1
lemon
cut into wedges
Optional: ¼ cup freshly grated parmesan cheese
Optional: Red pepper flakes to taste
Instructions
Preheat oven to 425°F (220°C).
Wash broccoli and dry thoroughly.
Cut broccoli into even-sized florets (about 1.5-2 inches). Peel woody stems if needed and cut into similar-sized pieces.
Place broccoli on a large baking sheet and drizzle with olive oil.
Sprinkle with salt, pepper, and minced garlic. Toss until evenly coated.
Arrange broccoli in a single layer, making sure pieces aren't touching.
Roast for 20-25 minutes, tossing halfway through, until edges are crispy and golden brown.
Remove from oven and immediately squeeze fresh lemon juice over the hot broccoli.
If using, sprinkle with parmesan cheese while still hot.
Transfer to a serving dish and enjoy immediately!
Notes
Notes: For extra flavor, try adding 1 teaspoon of Italian seasoning or 2 teaspoons of nutritional yeast before roasting.
