Turkey Salad

Ingredients

  • 3 cups cooked turkey shredded or diced
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2 stalks celery finely diced
  • 1/3 cup dried cranberries
  • 1/3 cup pecans toasted and chopped
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • In a large bowl, combine the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Whisk until smooth.
  • Add the diced or shredded turkey and toss to coat evenly.
  • Fold in the celery, dried cranberries, and toasted pecans.
  • Stir in the fresh parsley.
  • Taste and adjust seasoning as needed.
  • Serve immediately on bread, croissants, or over a bed of greens. Can also be chilled for 30 minutes for flavors to meld.
